The "Maison d'Uzès"

Welcome to a listed historic monument!

On 16 November 2010, UNESCO had the gastronomic cuisine of France placed under their protection to protect them as intangible heritage of humanity.

In contrast to the material culture heritage with natural landscapes and monuments the intangible cultural heritage protects traditions that are passed on from one generation to the next and have a substantial importance for the sense of identity and continuity of living communities and preserve the cultural diversity and human creativity.

One of the many examples of traditions and history in Uzes is the "Maison d' Uzes". This hotel offers in deed a fairly high standard of comfort and authenticity. A special feature is the spa in the hotel which is fed by the same good and clean water that had caused the Romans 2000 years ago to build the largest aqueduct at the time: the "Pont du Gard" to supply the city of Nimes with water. Well, also the "Pont du Gard" is protected by UNESCO as a cultural-historical building. The restaurant of "Maison d' Uzès" restaurant is of course not only opened for guests of the hotel but for every visitor.

The menus at the "La Table" restaurant are focusing on flavors from the South of France from the local markets with their fresh herbs and many other culinary treasures the region, such as really fresh truffles.

The kitchen is Oscar's "Kingdom". And Oscar adheres strictly to the traditional rules of the culinary arts. He does not create but he maintains the traditional cuisine as it is known for centuries in the region. He uses organic ingredients, from meat and fish to vegetables, wine, and even the mineral water, everything should be as local as possible. This ensures that all foods are always fresh. Why? Because Oscar does not "feed" its guests with a nicely decorative but rather lean filled plate he is genuine and uses proper nutritional, healthy and really delicious menus.

All the ingredients Oskar buys are fresh from the small shops in the neighborhood and coming from farmers of the area. After selecting fine ingredients and beautiful fruits and vegetables, tomatoes, courgettes, beans and aubergines which have ripen slowly in the warm sunshine in this part of the world. Regional cuisine means for Oscar to combine their colors and flavors and aromatic herbs. Pastries are made with regional fruits like peaches, apricots, and nectarines. Keeping this freshness and sweetness is quality in itself and have made the South of France so famous. 

The restaurant cuisine offers all the many facets of fine Languedoc cuisine and goes beautifully with a good bottle of regional wine. Guests can discover superb cuvées made by the best local winegrowers.
