But not every region can claim it has the best of the famous “black diamond”, the melanosporum "warns Michel Tournayre, president of the regional federation of truffle producers. The "black truffle" grows in France exclusively with oak trees. The truffles are harvested in late autumn and winter, reaching in average a size of 7 cm (2,7 inch) in diameter and weighing up to 100 g (3.52 ounce). Because of this the festival is also a gastronomic event that is taking place in many restaurants of Uzes with meals cooked by “five star chefs” who are mixing these truffles into everything, - into soufflés, into noodles, pheasant ragout, into desserts, you name it, the black mushroom is added to everything.
